Prepare the crust

Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let cool while preparing the filling.

Mix the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sweetened condensed milk, mixing until well combined. Stir in the key lime juice, lime zest, eggs, and vanilla extract until the mixture is smooth and creamy.

Pour the filling over the cooled crust in the springform pan. Bake in the oven for 25-30 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let it cool to room temperature.

Once cooled, refrigerate the cheesecake for at least 4 hours or preferably overnight to set completely.
