Cured Meats & Proteins

Method

Cured Meats & Proteins

1

Prepare and arrange cured meats

If slices are large, fold or roll prosciutto, salami, and capicola into loose rosettes or roll-ups (about 1–2 slices per rosette). Arrange them in small groups across the board—vary shape and height to create visual interest. Place the olives in a small bowl and position it on the board near the meats.

Cheeses

2

Portion and present cheeses

Cut aged Manchego or Parmigiano-Reggiano into shards or chunks. Slice the semi-soft cheese into thin wedges. Drain bocconcini and pat dry; toss lightly with 1 teaspoon olive oil and a grind of black pepper. Place cheeses on the board spaced apart so guests can approach from multiple sides. Add a small drizzle of honey over one wedge of the aged cheese or place honey in a tiny dish nearby.

Pickles & Vegetables

3

Drain marinated artichokes and sundried tomatoes well. Quarter artichoke hearts if large. Slice roasted red peppers into 1-inch strips. Arrange pickled items in small piles or in ramekins to contain their oil and juices, placing them adjacent to cheeses or meats that pair well (e.g., artichokes near mozzarella, roasted peppers next to salami).

Breads & Crackers

4

Slice the ciabatta or baguette thinly and toast until golden (5–8 minutes at 375°F / 190°C) or brush slices with olive oil and grill until marked. Fan slices and crackers in stacks on the board, leaving space for spreads and cheeses. Provide separate small plates or bread baskets if you prefer to keep the board tidy.

Spreads & Extras

5

Spoon olive tapenade and roasted garlic spread or whipped ricotta into small bowls or crocks. Scatter toasted walnuts or marcona almonds in a small pile (or bowl) on the board. Garnish cheeses and spreads with fresh basil leaves and a final drizzle of extra-virgin olive oil (about 2 teaspoons over spreads and cheese as desired). Finish with a light grind of black pepper over fresh mozzarella and a small pot of honey next to the aged cheese for guests to drizzle.

Assembly & Finishing

6

Build the display

Choose a large wooden board, slate, or platter. Start by placing the bowls (olives, tapenade, ricotta/honey) to anchor the composition. Arrange cheeses next, then tuck meats around the cheeses, folding and stacking to create height. Fill gaps with pickles, roasted peppers, sundried tomatoes, nuts, and bread. Ensure a balance of colors and textures across the board. Provide small serving forks, toothpicks, cheese knives, and napkins. Taste and adjust: add another drizzle of olive oil or a pinch more pepper if needed.

7

Serve immediately at room temperature for best flavor. Allow cheeses and meats to sit out 20–30 minutes before serving to bring out aromas. Leftovers: wrap cheeses and meats separately and refrigerate; take cheeses to room temperature before re-serving.
