Preparation
Preheat and prepare sheet
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. Lightly grease the parchment if desired.
Unroll dough and divide
Unroll the refrigerated crescent roll dough on a lightly floured surface or on its backing. If it is a perforated sheet, press the seams together to make an even sheet. Using a sharp knife or pizza cutter, cut the dough into 8 equal rectangular strips, each wide enough to wrap one hot dog.

Prepare hot dogs and cheese
If desired, slice each cheese slice in half lengthwise to make thinner cheese strips that wrap easily around the hot dog. Set cheese strips nearby. Optionally, make a shallow lengthwise slit in each hot dog and tuck a cheese strip inside for a cheese-stuffed variation.
Wrap hot dogs
Place one hot dog at the short end of a dough strip (or slightly off-center if using a larger rectangle). Lay a cheese strip on top of the hot dog (or inside the slit). Roll the dough around the hot dog, seam-side down, tucking the ends slightly under so the frank is enclosed but not tight. Repeat with all hot dogs and dough strips. If any dough strips are too small, press two pieces together and seal the seam with your fingers.
Arrange and brush
Place the wrapped franks on the prepared baking sheet about 1 inch apart. In a small bowl, whisk the egg with 1 tsp water to make an egg wash. Brush the tops of each wrapped frank lightly with the egg wash (this helps browning and adhesion). If using melted butter instead of egg wash or in addition, brush a small amount of butter on top for extra flavor.
Season
Sprinkle sesame seeds and/or coarse sea salt or everything bagel seasoning over the top of each wrapped frank, if desired.
Bake & Finish
Baking
Bake in the preheated oven for 12–15 minutes, rotating the pan once halfway through, until the dough is golden brown and cooked through and the hot dogs are heated. Baking time may vary slightly depending on oven and dough thickness.
Rest and serve
Remove the pan from the oven and let the franks rest 2–3 minutes on the baking sheet. Transfer to a serving platter. Serve warm with yellow mustard and ketchup (or other preferred dips).
