Method
Grilled Bread
Prep and slice
Preheat a grill pan or outdoor grill to medium-high. Slice the loaf on a diagonal into 12 pieces about 1/2-inch thick.
Grill the bread slices 1–2 minutes per side until marked and crisp but still slightly tender inside. Remove and while warm, rub the top of each slice with the cut side of the halved garlic cloves to impart a gentle garlic flavor. Set aside.
Roasted Pepper & Onion Mix
Roast vegetables
Preheat oven to 450°F (230°C). Core, seed and cut the bell peppers into 1/2-inch strips. Peel and cut the red onion into 1/2-inch slices or wedges. Toss the peppers and onion with 2 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon black pepper on a rimmed baking sheet in a single layer.
Roast for 18–22 minutes, stirring once halfway, until edges are caramelized and vegetables are soft. Remove from oven and let cool slightly.
Transfer roasted peppers and onions to a bowl. Add 1 tablespoon red wine vinegar, 1 teaspoon honey, and 1 teaspoon dried oregano. Toss to combine and adjust seasoning to taste. Let sit while you prepare the crab mixture so flavors meld.
Crab Topping & Binder
Prepare crab
Gently pick through the jumbo lump crab meat to remove any shells and break into large chunks, keeping some lumps intact for texture.
In a medium bowl, combine 1/2 cup mayonnaise, 1 tablespoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1/4 teaspoon hot sauce (optional), 2 tablespoons finely chopped parsley, 1 tablespoon sliced chives, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Mix until smooth.
Fold the crab gently into the mayo mixture, stirring carefully so you do not break up the lumps. Taste and adjust seasoning — add a little more lemon or salt if needed. Refrigerate briefly (10–15 minutes) if you prefer the topping chilled; otherwise proceed immediately.
Assembly & Finish
Spoon a thin layer (about 1 tablespoon) of the roasted pepper & onion mix onto each grilled bread slice, distributing evenly.
Top the peppers with a generous spoonful (about 1 heaping tablespoon) of the crab mixture, allowing some crab lumps to remain visible.
