Chill glass
If possible, place a large wine glass in the refrigerator or freezer for 5–10 minutes to chill. A chilled glass keeps the drink refreshingly cold longer.
Add ice
Fill the chilled large wine glass generously with ice cubes so the liquid will stay cold and the Prosecco will retain its carbonation.
Pour Prosecco
Pour 2 oz Prosecco into the glass first. Pouring the sparkling wine first helps reduce excessive foaming when you add the Aperol.
Add Aperol
Slowly add 3 oz Aperol. Pouring Aperol over the back of a spoon or down the side of the glass can minimize mixing and create a pretty layered effect.
Top with soda
Add 1 oz soda water to top the drink. Stir gently once with a bar spoon or long spoon 1–2 times to combine without flattening the bubbles.
Garnish and serve
Garnish the glass with 1 orange slice placed on the rim or floated in the drink. Serve immediately while cold and effervescent.
Notes: Adjust the Aperol-to-Prosecco ratio to taste — the traditional ratio is often 3 parts Prosecco : 2 parts Aperol : 1 part soda (which would be 3 oz Prosecco, 2 oz Aperol, 1 oz soda for a slightly drier result). The provided recipe (3 oz Aperol : 2 oz Prosecco) yields a slightly more Aperol-forward spritz. Use a good-quality Prosecco and fresh soda water for best flavor.
