Portion and season beef

Divide the Wagyu into three equal portions of approximately 3 oz each (9 oz total). Lightly form each portion into a loose, flat patty about 2 inches wider than the bun and about 3/4" thick in the center (they will compress while cooking). Do not overwork the meat. Season both sides of each patty with about 1 tsp fine sea salt and a scant 1/3 tsp freshly ground black pepper.

Preheat pan

Heat a cast-iron skillet or heavy sauté pan over medium-high heat until very hot, about 3–5 minutes. Add 1 tsp neutral oil and swirl to coat the surface. The oil prevents butter from burning and helps with searing.

Sear patties

Place the patties in the hot pan, leaving space between them. Sear without moving for 1 1/2 to 2 minutes until a brown crust forms. Flip and cook the second side 1 to 1 1/2 minutes for medium-rare to medium (adjust time ±30 seconds for desired doneness).

Add butter and cheese

Reduce heat to medium-low. Add the 1 tablespoon unsalted butter to the pan and spoon the melted butter over the patties once or twice. Immediately place thin slices of cheddar on each patty to melt, cover the pan with a lid or foil for 30–45 seconds if needed to speed melting.

Warm buns

While cheese melts, place the split slider buns face-down in a clean skillet or on a griddle over medium heat for 30–45 seconds until lightly toasted and golden. Brush with a light swipe of butter if desired.

Prepare sauce and condiments

Mix the 1 tsp Kewpie mayonnaise and 1 tsp yellow mustard together in a small bowl. The ratio can be adjusted to taste. Have 2 pickle slices per slider ready and rinse/ drain if very briny.

Assemble sliders

Spread about 1/2 tsp of the mayo-mustard sauce on the bottom half of each warmed bun. Place a small handful (about a pinch) of arugula or microgreens on the sauce if using. Put the hot Wagyu patty with melted cheddar on top, then add two pickle slices. Finish with the top bun and gently press to compact.

Serve

Serve immediately while hot. These 2 oz. mini Wagyu sliders are best enjoyed fresh to appreciate the tender, juicy beef and melted cheese. Provide napkins—these are rich and juicy.
