Method
Preparing the Chicken Filling
Cook the Chicken
In a skillet over medium heat, cook the chicken breasts until fully cooked, about 6-7 minutes per side. Remove from heat and let cool.
Shred the Chicken
Once cooled, shred the chicken using two forks and mix it with the red chile sauce and shredded cheese in a bowl.
Making the Jalapeno Bacon Cream Cheese Sauce
Prepare the Sauce
In a saucepan over medium heat, combine the cream cheese, heavy cream, garlic powder, onion powder, salt, and black pepper. Stir until smooth.
Add Bacon and Jalapeno
Fold in the crumbled bacon and diced jalapeno into the sauce and cook for an additional 2-3 minutes until heated through.
Assembling the Chimis
Fill the Tortillas
Lay out the flour tortillas and evenly distribute the chicken filling among them. Roll them tightly to form chimichangas.
Serve
Place the rolled chimichangas on a plate and drizzle generously with the jalapeno bacon cream cheese sauce before serving.
