Marinate the Lamb

In a bowl, combine olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. Mix well. Add the Colorado lamb chops to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Lamb

Remove the lamb chops from the marinade and let them sit at room temperature for about 15 minutes. Place the lamb chops on the hot grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

Once grilled, remove the lamb chops from the grill and let them rest for 5 minutes. Serve hot with your favorite sides.
