Prepare the Duck Breasts

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Cook the Duck Breasts

In a skillet, heat the olive oil over medium heat. Place the duck breasts skin-side down in the skillet and cook for about 6-8 minutes, or until the skin is crispy and golden brown.

Flip the Duck Breasts

Carefully flip the duck breasts over and add the fresh thyme and smashed garlic cloves to the skillet. Cook for an additional 4-6 minutes, until the internal temperature reaches 135°F (57°C) for medium-rare.

Add Butter

In the last minute of cooking, add butter to the skillet and baste the duck breasts with the melted butter for added flavor.

Rest and Slice

Remove the duck breasts from the skillet and let them rest for 5 minutes before slicing.
