Prepare the Liver

Rinse the calves liver under cold water and pat dry with paper towels. Slice the liver into 1/2-inch thick pieces.

Flour the Liver

Spread the all-purpose flour on a plate and season it with salt and black pepper. Dredge each piece of liver in the flour, shaking off the excess.

Cook the Onions

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are golden brown, about 10 minutes. Remove onions from the skillet and set aside.

Cook the Liver

In the same skillet, add the remaining 2 tablespoons of butter. Increase the heat to medium-high. Add the floured liver slices and cook for about 3-4 minutes on each side, or until browned and cooked to your liking. Avoid overcrowding the skillet; cook in batches if necessary.

Combine and Serve

Once the liver is cooked, return the sautéed onions to the skillet and toss to combine. Garnish with chopped parsley before serving.
