Strudel Preparation

Make the Dough

In a large bowl, mix flour and salt. Add warm water, olive oil, and vinegar. Knead until smooth, cover, and let rest for 30 minutes.

Prepare the Filling

In a separate bowl, combine sliced apples and pears with sugar, cinnamon, and lemon juice. Set aside.

Roll Out the Dough

On a floured surface, roll out the dough as thinly as possible into a large rectangle.

Assemble the Strudel

Spread the melted butter over the dough, then layer the fruit mixture evenly. Roll the dough tightly and tuck in the ends.

Bake the Strudel

Place strudel on a baking sheet lined with parchment paper. Brush with melted butter and bake at 375°F (190°C) for 25-30 minutes or until golden brown.

Gelato Preparation

Make the Gelato Base

In a saucepan, heat the milk, cream, sugar, and vanilla bean over medium heat until warm. In a bowl, whisk egg yolks. Gradually add the warm milk mixture to the yolks, whisking constantly.

Cook the Mixture

Return the mixture to the saucepan, cook on low heat, stirring until it thickens enough to coat the back of a spoon. Do not boil.

Chill and Churn

Remove from heat, strain into a bowl, and chill in the refrigerator. Once chilled, churn in an ice cream maker according to the manufacturer's instructions.
