Method
Prepare the Samosa Filling
Cook the Potatoes
Boil the potatoes in salted water until tender. Drain and mash them.
Combine Ingredients
Add the mashed potatoes, green peas, garam masala, cumin seeds, coriander powder, salt, cilantro, and lemon juice to the skillet. Mix well and cook for another 5 minutes. Allow to cool.
Assemble the Samosas
Fill and Fold
Cut the layered phyllo into strips. Place a tablespoon of filling at one end, fold over to form a triangle, and continue folding until you reach the end. Seal the edges with melted butter.
Bake
Place the samosas on a baking sheet lined with parchment paper. Brush the tops with more melted butter and bake for 25-30 minutes or until golden brown.
Prepare the Tamarind Sauce
Combine Ingredients
In a saucepan, combine tamarind pulp, water, brown sugar, salt, chili powder, and cumin powder.
Cook the Sauce
Bring to a boil, then reduce heat and simmer for 10-15 minutes until slightly thickened. Adjust seasoning to taste.
