Beef Rib Preparation

Prepare the Beef Rib

Preheat your oven to 300°F (150°C). Season the beef rib with salt and black pepper on all sides. Place it on a roasting rack in a baking dish.

Roast the Rib

Roast the beef rib in the preheated oven for 2.5 to 3 hours, or until tender. Baste with BBQ maple guava sauce halfway through the cooking time.

Make the Sauce

In a saucepan, combine guava paste, maple syrup, apple cider vinegar, minced garlic, smoked paprika, cayenne pepper, salt, and black pepper. Cook over medium heat, stirring until the guava paste is melted and the sauce is smooth. Allow to simmer for about 10 minutes.

Apple Coleslaw Preparation

Mix the Coleslaw

In a large bowl, combine shredded cabbage, grated carrots, and grated apple. In a separate small bowl, mix together mayonnaise, apple cider vinegar, honey, salt, and black pepper. Pour this dressing over the cabbage mixture and toss well to coat.

Coconut Bread Preparation

Prepare the Coconut Bread

In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix coconut milk and eggs. Combine the wet and dry ingredients and mix until just combined. Pour into a greased loaf pan.

Bake the Bread

Bake in a preheated oven at 350°F (175°C) for 45-50 minutes or until a toothpick inserted into the center comes out clean.
