Prepare the Shrimp

Peel and devein the jumbo shrimp, leaving the tails on. Rinse and pat dry with paper towels.

Set Up Breading Station

In one bowl, combine all-purpose flour, salt, and black pepper. In a second bowl, whisk the eggs. In a third bowl, combine cornmeal and coconut flakes.

Bread the Shrimp

Dip each shrimp first into the flour mixture, then into the egg, and finally into the cornmeal-coconut mixture, pressing the mixture onto the shrimp to adhere.

Fry the Shrimp

Heat oil in a large pan over medium-high heat. Once hot, add the breaded shrimp in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side.

Drain and Serve

Remove the fried shrimp from the oil and drain on paper towels. Serve immediately with ginger tamarind sauce drizzled on top.
