Preparation
Wine Making Process
1. Harvesting and Crushing
Harvest the Moscato grapes at peak ripeness. Crush the grapes to release their juice.
2. Fermentation
In a fermentation vessel, combine the grape juice with sugar and water. Add the yeast and let it ferment at a controlled temperature for about 2-3 weeks.
3. Secondary Fermentation
After primary fermentation, transfer the wine to a secondary vessel to clarify. Allow it to ferment for an additional 1-2 weeks.
4. Bottling
Once fermentation is complete and the wine is clear, bottle the wine in a half bottle (375ml) format. Seal and label the bottles.
5. Aging
Allow the Moscato D’Asti to age for at least 3 months in a cool, dark place before serving.
