Prepare the Yeast Mixture

In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Batter

In a large bowl, whisk together the flour and salt. In another bowl, combine the eggs, melted butter, and vanilla extract. Add the yeast mixture to the egg mixture and stir to combine. Gradually add the wet ingredients to the dry ingredients and mix until smooth. Gently fold in the pearl sugar.

Let it Rise

Cover the bowl with a clean towel and let the batter rise in a warm place for about 30 minutes or until it has doubled in size.

Cook the Waffles

Preheat your waffle iron. Once the batter has risen, scoop the batter onto the waffle iron and cook according to the manufacturer’s instructions until golden brown and crispy.

Make the Whipped Cream

In a mixing bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the dulce de leche and vanilla extract, continuing to beat until stiff peaks form.

Stack the waffles on a plate, top with seasonal fruit and mixed berries. Drizzle with pure maple syrup and dollop with dulce de leche whipped cream.
