Preparing the Rice

Cook the Rice

In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.

Grilling the Halibut

Prepare the Halibut

Preheat the grill. Brush halibut fillets with olive oil, and season with salt, pepper, and lemon juice. Grill for about 4-5 minutes on each side or until cooked through.

Sautéing the Vegetables

Cook the Vegetables

In a skillet, heat olive oil over medium heat. Add asparagus, bell pepper, and carrots. Season with salt and sauté for about 5-7 minutes until tender.

Making the Beurre Blanc

Prepare the Sauce

In a saucepan, combine minced shallots and white wine. Simmer until reduced by half. Whisk in butter, one piece at a time, until melted and emulsified. Stir in lemon juice, capers, salt, and pepper.

On a plate, serve a portion of coconut jasmine rice topped with grilled halibut, a side of sautéed market vegetables, and drizzle with lemon caper beurre blanc.
