Make the Honey-Ginger Syrup

    Combine and simmer

    In a small saucepan combine 1/4 cup water and 1/4 cup honey with a 1-inch piece of fresh ginger, peeled and smashed. Warm over low heat until honey dissolves and mixture is fragrant, about 4–6 minutes. Do not boil vigorously.

    Steep and strain

    Remove from heat and let the ginger steep for 10 minutes. Strain out the solids and cool the syrup to room temperature. This yields roughly 1/2 cup honey-ginger syrup; refrigerate any leftovers up to 2 weeks.

Build The Barill

    Chill: Place a coupe or Nick & Nora glass in the freezer or fill with ice water to chill while you prepare the cocktail.

    Measure: In a mixing glass or cocktail shaker add 2 oz gin, 1/2 oz Aperitif (Aperol or Campari), 3/4 oz sweet vermouth, 1/2 oz fresh lemon juice, 1/2 oz honey-ginger syrup, and 2 dashes orange bitters.

    Ice and stir (or shake): Add large ice cubes to the mixing glass (enough to fill). Stir briskly for 20–30 seconds until the mixture is well chilled and slightly diluted. If you prefer a brighter, more aerated texture, shake vigorously with ice for 10–12 seconds and then double-strain into the glass.

    Prepare glass: Remove the chilled glass from the freezer or dump the ice water. If using a coupe, you can rinse briefly with a few drops of the aperitif for an aromatic edge (optional) and discard the rinse.

    Strain and serve: Fine-strain the cocktail into the chilled glass over a single large ice cube if serving in an old-fashioned glass, or serve neat in the chilled coupe/Nick & Nora.

    Garnish: Express the orange peel over the drink by holding the peel skin-side down about 3–4 inches above the surface and giving it a firm twist to spray oils onto the cocktail. Rub the peel on the rim and drop it into the drink. Optionally thread a piece of candied ginger on a pick and rest across the glass.

    Taste and adjust: If the cocktail reads too bitter, add an extra 1/4 oz honey-ginger syrup and stir again. If too sweet, add 1/4 oz more lemon juice. The Barill balances bitter aperitif, herbal vermouth and warming honey-ginger with bright citrus.
