Dough
Mix dry ingredients
In a large bowl, whisk together 3 cups all-purpose flour, 1 tsp sugar, and 1 tsp fine salt until evenly combined.
Cut in butter
Add the 6 tablespoons cold cubed butter to the flour. Using a pastry cutter, two forks, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Add cream cheese and liquid
Cube the 3 ounces room-temperature cream cheese and add to the bowl. Lightly mash and incorporate the cream cheese into the flour-butter mixture. In a separate small bowl, whisk the 3 tablespoons warm milk and 1 large egg until combined. Pour the egg-milk mixture into the dry ingredients and mix with a fork until a shaggy dough forms.
Knead and rest
Turn the dough onto a lightly floured surface and knead gently 6–8 times until it comes together into a smooth ball — do not overwork. Flatten into a disk, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes (up to 2 hours). Chilling helps make the dough easier to roll and prevents shrinking during frying.

While the dough chills, cut cheese into 12 sticks roughly 3/4" x 3/4" x 2 1/2". Pat dry with paper towel to remove excess moisture. Lightly dust each stick with the 1 tablespoon flour to help the dough adhere.
Roll dough
Remove dough from refrigerator and let sit 5 minutes to soften slightly. On a lightly floured surface, roll the dough into a rectangle about 12 x 10 inches and roughly 1/8 inch thick. Keep the surface and rolling pin lightly floured to prevent sticking.
Cut strips
Using a sharp knife or pizza cutter, cut the dough into 12 strips approximately 1 inch wide and 10–12 inches long. If your strips are longer than the cheese, trim them to leave a 1/4–1/2 inch overlap when wrapping.
Wrap cheese
Place a floured cheese stick at one end of a dough strip and roll tightly so the dough overlaps and fully covers the cheese, sealing the edge by pinching the dough gently. Place each wrapped tequeño seam-side down on a parchment-lined tray and repeat with remaining pieces. For an extra-secure seal, brush the final 1/4 inch of dough with a little water or a tiny dab of egg wash before sealing.
Chill again (optional but recommended)
Place the tray of wrapped tequeños in the refrigerator for 15–20 minutes to firm up. This reduces cheese leakage during frying.
Coating & Frying
Heat oil
In a heavy, deep skillet or Dutch oven, pour enough neutral oil to reach about 1.5–2 inches deep (approximately 3–4 cups depending on vessel). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of dough — it should sizzle and rise steadily without browning immediately.
Fry in batches
Working in batches so you don't overcrowd the pan, carefully lower 3–4 tequeños into the hot oil seam-side up. Fry for 2.5–3.5 minutes, turning once with tongs or a slotted spoon so all sides brown evenly. The exterior should be deep golden and crisp and the cheese melted inside. Adjust heat as needed to maintain 325–350°F so they brown but don't burn.
Drain
Use a slotted spoon to transfer cooked tequeños to a wire rack set over a baking sheet or to paper towels to drain for 1–2 minutes. This helps keep them crisp.
Serve immediately
Serve tequeños hot so the cheese is melty. Offer optional dipping sauces such as guava paste dip or salsa rosada. If not serving immediately, keep warm in a 200°F oven on a wire rack for up to 30 minutes, but best enjoyed fresh.
Storage & Reheating
Store cooled leftover tequeños in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven on a wire rack for 6–8 minutes, or warm in an air fryer at 350°F for 3–5 minutes until heated through and crisp. Avoid microwaving — cheese may become rubbery and dough soggy.
