Make the simple citrus syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring until the sugar is fully dissolved and the mixture just comes to a simmer (do not boil hard).

Remove the pan from heat. Stir in 3 tbsp fresh lemon juice, 2 tbsp fresh lime juice, 1 tsp lemon zest and 1 tsp lime zest until well combined.

If using, add 1 tsp citric acid and 1 tsp vanilla extract. Stir to dissolve. The citric acid boosts tang and shelf stability; the vanilla adds a faint rounding note similar to commercial lemon-lime sodas.

Allow the syrup to cool to room temperature (about 20–30 minutes). For a clearer syrup, strain through a fine mesh sieve to remove zest and any solids. Transfer to a clean jar and refrigerate if not using immediately.

Fill four serving glasses with ice (about 1/2 cup ice per glass).

Measure out the syrup. For a balanced lemon-lime soda, use about 2 tablespoons (30 ml) of syrup per 8 oz (1 cup) of carbonated water. For the recipe quantities above (4 cups soda), use 8 tablespoons (1/2 cup) syrup total. Adjust to taste if you prefer sweeter or tarter.

Divide the syrup evenly among the prepared glasses (approximately 2 tablespoons syrup per glass).

Slowly pour chilled club soda (1 cup per glass) over the syrup and ice to preserve carbonation, stirring gently once with a spoon to combine.

Garnish each glass with a lemon slice, a lime slice, and a mint sprig if desired. Serve immediately.

Leftover syrup will keep refrigerated in a sealed jar for up to 10 days. Always stir before using as the citrus can settle.
