Caramel
Make caramel
Place the 1 cup sugar and 2 tablespoons water in a medium heavy-bottomed saucepan over medium heat. Stir gently just to moisten the sugar and bring to a simmer. Once the sugar dissolves and the mixture starts to simmer, stop stirring and swirl the pan occasionally to promote even melting. Cook until the syrup turns a deep amber color (about 8–12 minutes). Watch carefully to avoid burning.
Quickly pour the hot caramel into a 9-inch round flan mold or a 1.5–2 quart bundt/flanera, tilting to coat the bottom evenly. Set aside to let the caramel harden and cool slightly. Do not leave the caramel unattended while hot.
Custard (Quesillo)
Preheat and prepare
Preheat the oven to 350°F (175°C). If desired, lightly grease the sides of the caramel-lined mold with 1 tablespoon butter or nonstick spray to help unmold later.
Blend the custard
In a blender or large mixing bowl, add 6 large eggs and pulse briefly to break. Add 1 can sweetened condensed milk, 1 can evaporated milk, 1 cup whole milk, 1 teaspoon vanilla extract, 1 teaspoon dark rum (optional) and a pinch of salt. Blend on medium speed just until smooth and homogeneous (about 20–30 seconds). Avoid overbeating to minimize foam and bubbles.
Skim foam
If the mixture is frothy, let it rest for a few minutes to allow bubbles to rise. Skim off surface foam with a spoon or use a fine mesh strainer to pour the custard into the caramel-lined mold. Straining ensures a silky texture and removes remaining chalazae or foam.
Carefully pour the strained custard into the prepared mold over the set caramel. Do not fill past 3/4 of the mold to avoid overflow during baking.
Bain-Marie and Baking
Bake
Carefully transfer the pan to the preheated oven. Bake at 350°F (175°C) for 50–60 minutes, or until the custard is set but still slightly jiggly in the center. A knife inserted near the center should come out mostly clean with a few moist crumbs.
Cool gradually
Remove the flan mold from the water bath and allow to cool to room temperature on a wire rack (about 1 hour). Then refrigerate at least 4 hours or preferably overnight to fully set and develop flavor.
Unmolding and Serving
Unmold
To unmold, run a thin knife or offset spatula around the inner edge of the mold to loosen the custard from the sides. Place a serving plate over the mold and quickly invert both together. Tap the mold gently and lift it off—the caramel will flow over the quesillo.
If the caramel sticks, warm the bottom of the mold briefly in a pan of hot water (not boiling) for 10–20 seconds to loosen the caramel, then invert again.
Serve
Slice and serve chilled. Quesillo keeps well refrigerated for 3–4 days. For garnish, optionally serve with thinly sliced citrus, toasted coconut, or a few berries.
