Method
Make Panela Syrup
Dissolve panela
Place 3 cups panela (panela can be broken into chunks if needed) in a medium heatproof bowl or saucepan. Pour 2 cups of hot (not boiling) water over the panela. Let sit for 5 minutes, then stir or whisk vigorously until fully dissolved into a smooth, dark syrup. If small solids remain, gently warm the mixture over low heat while stirring until fully dissolved, about 3–5 minutes. Remove from heat and let cool slightly.
Assemble Beverage
In a 1-gallon pitcher or container, pour the panela syrup. Add 1 cup freshly squeezed lime juice (about 6–8 medium limes) and 1 tablespoon lime zest. Stir to combine. Add 11 cups cold water and mix thoroughly. Taste and adjust: if too sweet, add up to 1 cup additional lime juice or more cold water; if too tart, dissolve 1–2 tablespoons additional panela in a little hot water and stir in.
Chill the mixture in the refrigerator for at least 1 hour to meld flavors, or serve immediately over ice for a refreshing drink.
Serve
Fill glasses with ice (about 1–1.5 cups ice per glass). Pour Papelon con Limón over ice. Garnish each glass with a lime wheel or wedge and an optional mint sprig. Serve cold.
