Prepare Batter

Blend corn

Place the fresh or thawed corn kernels, milk, eggs, vegetable oil, sugar, and salt in a blender or food processor. Pulse until you have a coarse-smooth mixture: you want some small bits of corn for texture but a pourable batter. This usually takes 20–40 seconds depending on your equipment.

Combine dry ingredients

In a medium bowl, whisk together the all-purpose flour, masa harina (if using), and baking powder until evenly mixed.

Finish batter

Pour the blended corn mixture into the dry ingredients and stir with a spatula until just combined. The batter should be thick but pourable — similar to a thick pancake batter. If too thick, add up to 2 tablespoons additional milk. Let the batter rest 10 minutes while you heat the pan.

Cook Mini Cachapas

Heat pan

Heat a nonstick skillet or cast-iron pan over medium heat. Lightly brush the surface with a little vegetable oil or butter to prevent sticking.

Spoon batter

Using a 2–3 tablespoon scoop (or a small ladle), spoon portions of batter into the hot pan to form small, 3–4 inch rounds (mini cachapas). Leave space between them as they will expand slightly. You should be able to cook several at once depending on pan size.

Cook first side

Cook the mini cachapas for about 2–3 minutes on the first side. Bubbles will appear at the surface and the edges will start to set and become golden. Adjust heat if they brown too quickly.

Flip and finish

Flip each mini cachapa and cook for another 1.5–2 minutes until both sides are golden and the centers are cooked through. The interior should be moist and tender with visible corn bits.

Keep warm

Transfer cooked cachapas to a baking sheet and keep warm in a low oven (about 200°F / 95°C) while you finish the rest of the batter. Re-brush the pan with a little oil as needed between batches.

Assemble & Serve

Spread about 1/2 teaspoon of softened butter on one mini cachapa, top with a tablespoon of crumbled queso fresco (or your chosen cheese), then sandwich with a second mini cachapa if desired to make a small stuffed cake. Alternatively, serve cachapas open-faced with butter and cheese on top.

Garnish with chopped cilantro and serve with hot sauce or ají on the side for guests to add to taste.

Serve immediately while warm. Leftover mini cachapas can be cooled, wrapped, and refrigerated for up to 2 days; reheat gently in a skillet or oven to restore crisp edges.
