Prepare the guavas
Wash the guavas thoroughly under running water to remove any dirt. Pat dry. Cut off the stem ends, then cut each guava into quarters. If the guavas are large, slice into smaller pieces so they blend evenly.
Blend
Place the cut guava pieces into a blender. Add 1 cup of the cold water and the granulated sugar. Blend on high for 45–60 seconds until the mixture is very smooth and there are no large chunks.
Strain
Place a fine-mesh sieve or a chinois over a large bowl or pitcher. Pour the blended guava mixture through the sieve. Use the back of a spoon or a rubber spatula to press the pulp, extracting as much liquid as possible. Discard the coarse seeds and remaining pulp (or reserve for baking). You should obtain a thick guava purée.
Thin and season
Return the strained guava purée to the pitcher. Add the remaining 3 cups of cold water, the fresh lime juice, and the salt. Stir until the sugar is fully dissolved and the juice is well combined. Taste and adjust sweetness or acidity: add up to 1–2 TBS more sugar if needed, or more lime juice for brightness.
Chill and serve
Add the ice cubes to the pitcher or to individual glasses. Pour the guava juice over the ice. Garnish with lime slices and mint sprigs if using. Serve immediately or chill in the refrigerator for up to 24 hours. Stir before serving if liquid separates.
