Prepare and Peel
Trim the ends of the yuca roots. Use a sharp knife to cut each root into 3–4 pieces about 3–4 inches long. Make a shallow lengthwise cut through the thick brown skin and peel it away with the knife or your fingers; remove the thin pinkish layer under the skin so only the white flesh remains. Rinse the peeled pieces under cold water.
Cut into Fryable Pieces
Cut each peeled yuca piece in half lengthwise, then into sticks roughly 1/2–3/4 inch thick (similar to thick fries) or into 2–3 inch chunks if you prefer a rustic fritter.
Boil Until Just Tender
Place the yuca pieces in a large pot and add the 8 cups water, 2 tsp salt, and bay leaf if using. Bring to a boil over high heat, then reduce to a simmer. Cook until the yuca is just tender and a fork slides in easily but the pieces still hold their shape, about 12–18 minutes depending on size. Do not overcook — you don’t want them falling apart.
Drain and Dry
Carefully transfer the yuca to a colander and allow it to drain. Let it cool slightly until easy to handle, then pat the pieces very dry with paper towels. Removing surface moisture helps achieve crisping when frying.

Optional Light Coating
If using cornstarch for a slightly crisper exterior, toss the dried yuca pieces lightly with 1 tablespoon cornstarch so they are evenly coated and shake off excess.
Fry in Batches
Carefully add yuca pieces to the hot oil in a single layer without overcrowding — work in batches. Fry until the exterior is golden brown and crisp, about 3–5 minutes per side for sticks, or 4–6 minutes total for chunks, turning once with tongs. Adjust time based on thickness; larger pieces need a bit longer. Monitor oil temperature and reduce heat slightly if it browns too fast.
Drain
Using a slotted spoon or spider, transfer fried yuca to a paper towel–lined tray to drain excess oil. While still hot, sprinkle with the finishing salt and freshly ground black pepper.
Finishing & Serving
Notes: If you’d like a softer interior with crisp exterior, you can briefly parboil a second time (1–2 minutes) after initial drain, then dry and fry. Leftovers can be reheated in a 400°F (200°C) oven for 8–10 minutes to regain some crispness.
