Method

Assembly

1

Chill glass and ingredients

If possible, chill a highball or Collins glass in the freezer for 10–15 minutes. Ensure the carbonated water and cola syrup are well chilled before assembly to preserve fizz.

2

Add ice

Fill the chilled glass about three-quarters full with fresh ice cubes (approximately 1 cup).

3

Combine syrup and flavorings

In a small measuring cup or mixing glass combine 2 fl oz cola syrup (or homemade cola concentrate), 1 dash vanilla extract and 1/2 tsp fresh lime juice. If using an unsweetened concentrate or plain syrup, add 1 tablespoon granulated sugar and stir until dissolved. Taste and adjust sweetness or lime to preference.

4

Top with carbonated water

Slowly pour 12 fl oz chilled carbonated water over the back of a spoon onto the ice and syrup mixture to preserve carbonation and encourage gentle mixing. Pour steadily until the glass is nearly full.

5

Lightly stir

Using a bar spoon or long spoon, give the drink one or two gentle stirs to homogenize the syrup and soda without losing too much fizz.

6

Garnish and serve

Garnish with a lime wheel on the rim or floated on top. Serve immediately with a straw if desired.
