Prepare & Soak Beans

Sort and rinse

Spread the dried black beans on a baking sheet or tray and pick out any small stones or debris. Place the beans in a colander and rinse under cool running water until water runs clear.

Soak (quick or overnight)

Overnight method: Transfer rinsed beans to a large bowl, cover with 4 cups of water (about 2 inches above the beans) and soak 8–12 hours at room temperature. Quick-soak method: Put beans in a pot, cover with 4 cups water, bring to a boil for 2 minutes, remove from heat, cover and let sit 1 hour. Drain and rinse soaked beans before cooking.

Cook Aromatics

In a heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat until shimmering. Add the chopped onion and sauté 6–8 minutes, stirring occasionally, until soft and translucent. Add the diced green bell pepper if using and cook 3 minutes more until slightly softened. Add the minced garlic and cook 30–45 seconds until fragrant, stirring so garlic does not brown.

Simmer Beans

Add the drained soaked beans to the pot with the aromatics and stir to combine. Sprinkle in the ground cumin, dried oregano, and bay leaf. Add 2 cups of broth (or water) and the additional 2 cups of water reserved for cooking (totaling about 4 cups cooking liquid, adjust if beans were not soaked and require more). Bring mixture to a gentle boil over medium-high heat.

Once boiling, reduce heat to low so the pot is at a gentle simmer. Partially cover the pot with a lid (leave a small gap for steam to escape) and simmer until beans are tender, 60–90 minutes depending on bean age and soaking. Check every 20–30 minutes: stir gently, and add 1/2 cup hot water or broth as needed to keep beans just submerged. Remove and discard any foam that accumulates with a spoon.

When beans are tender and creamy but still holding shape, season with salt and black pepper. Simmer 5–10 minutes more to let salt penetrate and flavors meld. Taste and adjust seasoning—add more salt, pepper, or cumin as desired.

Finish & Serve

Turn off heat. Remove and discard the bay leaf. Stir in fresh lime juice and chopped cilantro if using. For a creamier texture, use a potato masher or an immersion blender to mash about 1/3 of the beans right in the pot, then stir to create a thicker, saucier consistency.

Serve hot as a side, over rice, in burritos, or as a base for bowls. Leftover beans will keep refrigerated in an airtight container for 4–5 days or frozen for up to 3 months.
