Method
Burger
Form and season patty
Gently form the 0.5 lb ground beef into a loosely packed patty about 3/4 to 1 inch thick and slightly wider than your bun. Do not overwork the meat. Create a shallow dimple in the center with your thumb to prevent domeing. Season both sides with the kosher salt and freshly ground black pepper just before cooking.
Cook the patty
Place the patty on the hot grill or skillet. Cook without moving for 3 to 4 minutes to develop a good sear. Flip and cook 3 more minutes for medium (adjust time ±1 minute for desired doneness). During the last 60–90 seconds of cooking, place the pepper jack cheese slices on the patty to melt and brush the top lightly with the melted unsalted butter.
Toppings & Sauce
Make Ghost Reaper Honey Sauce (if making homemade)
In a small saucepan over low heat combine 1/4 cup honey, 1 tablespoon apple cider vinegar, 1/2 teaspoon ghost pepper paste (start with less if sensitive), 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder and 1/8 teaspoon salt. Warm gently, whisking until smooth and slightly thinned, 2–3 minutes—do not boil. Taste and adjust heat by adding more paste or thinning with a little more vinegar or honey. Remove from heat and let cool slightly.
Assemble sauce on burger
Spread mayonnaise on the cut inner top bun if using. Spoon or brush about 2 tablespoons of Ghost Reaper Honey Sauce onto the melted cheese side of the patty. Add the fresh jalapeño slices atop the sauce. If using lettuce or onion, place them on the bottom bun first.
Bun & Finish
Final assembly and serve: place the sauced, cheese-topped patty on the bottom bun (or on top of lettuce/onion if used). Cap with the top bun spread with mayonnaise. Serve immediately with a napkin — this burger is very spicy. Recommend a cold beverage and something to cool the heat (milk or yogurt-based dip).
