Preparation

1

Clean the Shellfish

Rinse mussels and clams under cold running water to remove any sand or grit. Discard any mussels or clams that are open and do not close when tapped.

2

Chop Aromatics

Finely chop the garlic, shallots, and parsley. Set aside.

Cooking

3

Sauté Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped shallots and garlic, and sauté for about 2-3 minutes until they are fragrant and translucent.

4

Add Liquids

Pour in the white wine, chicken broth, and water. Bring the mixture to a simmer.

5

Season the Broth

Add salt, black pepper, and red pepper flakes to the simmering broth. Stir to combine.

6

Steam the Shellfish

Add the cleaned mussels and clams to the pot. Cover with a lid and steam for about 5-7 minutes, or until all the shells have opened.

7

Finish with Parsley and Lemon Zest

Once the shellfish are cooked, stir in the chopped parsley and lemon zest. Serve immediately with crusty bread.
