Crust Preparation

Make the crust
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until the crumbs are well coated and the mixture resembles wet sand.

Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the back of a measuring cup or your fingers to compact the crust.

Pre-bake the crust
Preheat your oven to 350°F (175°C). Place the crust in the oven and bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Prepare the filling
In a medium bowl, whisk together the egg yolks until smooth. Then, add the sweetened condensed milk and whisk until fully combined.

Add lime juice and zest
Slowly add the key lime juice and lime zest to the egg mixture, whisking continuously until the mixture is smooth and well incorporated.

Fill the crust
Pour the lime filling into the cooled graham cracker crust, spreading it evenly with a spatula.

Bake the pie
Return the pie to the oven and bake for 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours or until chilled.

Make the whipped cream
In a large mixing bowl, use a hand mixer or stand mixer to beat the heavy whipping cream until it begins to thicken. Gradually add the powdered sugar, and continue beating until stiff peaks form.

Top the pie
Spread the whipped cream over the chilled key lime filling, using a spatula to create an even layer.

Decorate the top of the pie with lime slices for garnish.
