Add the Seafood
Add the shrimp, crabmeat, and crawfish to the skillet. Season with salt and black pepper. Cook for another 3-4 minutes until the shrimp turn pink and are cooked through. Remove from heat and set aside.
Make the Omelet

Prepare the Egg Mixture
In a mixing bowl, whisk together 3 eggs, 30 ml of milk, and a pinch of salt.

Cook the Omelet
In a non-stick skillet, melt 1 tablespoon of butter over medium-low heat. Pour in the egg mixture and cook for about 2-3 minutes until the edges begin to set.

Add the Filling
Once the omelet is mostly set, spoon the sautéed seafood mixture onto one half of the omelet. Carefully fold the other half over the filling and cook for an additional 1-2 minutes until fully set.
Prepare Crispy Fried Potatoes

Fry the Potatoes
Add the cubed potatoes to the hot oil. Fry until golden brown and crispy, about 10-12 minutes, stirring occasionally. Drain on paper towels and season with salt and paprika.
