Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Mix Wet Ingredients
In a separate bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until smooth.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; some lumps are okay.

Preheat the Pan
Heat a non-stick skillet or griddle over medium heat and add the additional tablespoon of butter or oil to coat the surface.

Cook the Pancakes
Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip and Finish
Carefully flip the pancakes and cook for another 1-2 minutes until golden brown. Remove from the skillet and keep warm while you repeat with the remaining batter.

Serve the pancakes warm, topped with butter and maple syrup to taste.
