Onion Straws
Sautéed Shrimp
Method
Preparation of Onion Straws
- 1
Slice the Onions
Peel the onions and slice them into thin rings, about 1/8 inch thick. Separate the rings and set them aside.
- 2
Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together until well mixed. Gradually add the ice water and stir until a smooth batter forms.
- 3
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat the Onion Rings
Dip the onion rings into the batter, ensuring they are evenly coated. Allow excess batter to drip off.
- 5
Fry the Onion Straws
Carefully place the coated onion rings into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Preparation of Sautéed Shrimp
- 6
Cook the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, salt, and black pepper. Cook for 3-4 minutes until the shrimp are pink and opaque.
- 7
Finish with Lemon and Parsley
Remove from heat and stir in the lemon juice and chopped parsley. Mix well to combine.
Assembly
- 8
Serve
On a serving plate, create a bed of crispy onion straws and top with the sautéed shrimp. Serve immediately and enjoy!
