Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Whisk together until well combined.

  2. 2

    Coat the Salmon

Place the salmon fillets in the marinade and turn to coat evenly. Let them marinate for at least 15-30 minutes at room temperature.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

Wash and chop zucchini, bell pepper, and trim the asparagus. Cut zucchini into half-moon slices and bell pepper into strips.

  2. 4

    Season the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 6

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 4-6 minutes on each side, or until the salmon flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill and let them rest for a minute. Serve the grilled salmon alongside the grilled seasonal vegetables.

  2. 9

    Garnish (Optional)

You can garnish the dish with fresh lemon wedges or herbs like parsley or dill if desired.
