Method
Preparing the Calamari

Clean and Prepare Calamari
If not pre-cleaned, clean the calamari by removing the head, innards, and skin. Cut the body into rings about 1/2 inch thick.

Marinate Calamari
Place the cleaned calamari rings in a bowl and pour buttermilk over them. Let them marinate in the refrigerator for at least 30 minutes.

Prepare Breading
In a separate bowl, mix together flour, cornstarch, salt, black pepper, and garlic powder.
Frying the Calamari

Heat Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat Calamari
Remove the calamari from the refrigerator and let excess buttermilk drip off. Dredge each calamari ring in the flour mixture until fully coated.

Fry Calamari
Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Drain Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Add crushed tomatoes, oregano, salt, and black pepper to the saucepan. Stir well and let it simmer for 10-15 minutes, allowing the flavors to meld.

Finish with Basil
Stir in the chopped fresh basil and cook for an additional minute. Remove from heat.

Serve the crispy fried calamari hot with a side of marinara sauce for dipping.
