Method
Cake Preparation
- 1
- 2
Melt chocolate and butter
In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring after each interval until fully melted and smooth.
- 3
Mix sugar and eggs
In a separate bowl, whisk together the granulated sugar, large eggs, egg yolk, and vanilla extract until the mixture is pale and slightly thickened.
- 4
Combine mixtures
Gradually add the melted chocolate mixture into the egg mixture, stirring constantly until fully combined.
- 5
Add flour and salt
Sift in the all-purpose flour and add a pinch of salt. Gently fold the mixture until there are no visible flour streaks.
- 6
Fill ramekins
Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes until the edges are firm but the center is soft.
- 8
Cool slightly
Once baked, remove from the oven and let them cool for 1 minute. This will help the cakes to settle before serving.
Serving
- 9
Plate the cake
Carefully run a knife around the edges of each ramekin to loosen the cake. Invert them onto individual plates.
- 10
Add ice cream
Serve each cake warm with a scoop of vanilla ice cream on top or on the side.
- 11
Garnish
Dust with powdered sugar and add fresh berries on the plate for an elegant touch.
