Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently until just combined. Be careful not to overmix.

Shape the Biscuits
Turn the dough out onto a lightly floured surface and gently pat it into a rectangle about 1 inch thick. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake the biscuits in the preheated oven for 12-15 minutes or until they are golden brown.

Cook the Sausage
In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 5-7 minutes.

Make the Roux
Sprinkle the 0.5 cups of all-purpose flour over the cooked sausage, stirring to coat the sausage evenly. Cook for an additional 1-2 minutes to remove the raw flour taste.

Add Milk
Gradually whisk in the milk, making sure to break up any lumps. Continue to cook, stirring frequently, until the gravy thickens, about 5-7 minutes.

Season the Gravy
Season the gravy with salt, black pepper, and red pepper flakes. Taste and adjust seasoning if necessary.
