Make simple syrup and steep mint

Combine 1 cup water and 0.75 cup granulated sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Add 0.5 cup fresh mint leaves and remove from heat. Cover and steep 15 minutes to infuse.

Strain and mix

Strain the mint syrup through a fine-mesh sieve, pressing on leaves to extract flavor. Discard solids. Stir in 1 cup fresh lime juice, 1 tablespoon lime zest, 1 teaspoon light corn syrup, and 1/8 teaspoon salt. Taste and adjust: add up to 2 tablespoons more sugar or a splash more lime juice if needed.

Chill and churn

Cool the mixture to room temperature, then refrigerate until thoroughly chilled (at least 1 hour). Pour chilled base into an ice-cream maker and churn according to manufacturer instructions until it reaches a soft-sorbet consistency (about 20–30 minutes).

Harden

Transfer sorbet to a shallow, airtight container, smooth the top, press a piece of parchment directly on the surface to prevent ice crystals, and freeze at least 2 hours to firm up before serving.

Ginger-Orange Sorbet

Make ginger-infused syrup

Combine 0.5 cup water, 0.75 cup granulated sugar and 2 tablespoons sliced fresh ginger in a small saucepan. Bring to a simmer and stir to dissolve sugar. Simmer gently for 3 minutes, then remove from heat and steep, covered, for 20 minutes to allow ginger to infuse.

Strain and combine with juices

Strain the syrup into a bowl, pressing on ginger to extract flavor; discard solids. Stir in 2 cups fresh orange juice, 1 tablespoon orange zest and 1 tablespoon lemon juice, plus 1/8 teaspoon salt. Taste and adjust sweetness or acidity as desired.

Chill and churn

Cool the orange-ginger mixture to room temperature, then chill in refrigerator at least 1 hour. Churn in an ice-cream maker until soft-sorbet stage (about 20–30 minutes).

Harden

Transfer to a shallow airtight container, smooth surface and press parchment on top. Freeze for at least 2 hours for a scoopable texture.

To Serve & Garnish

Scoop: Using a sorbet or ice-cream scoop dipped briefly in warm water, scoop the lime-mint and ginger-orange sorbets into chilled bowls or glasses, alternating flavors for a striped or layered presentation (Especial dos sorbetes = two-sorbet special).

Garnish: Top each serving with a mint sprig and a thin orange or lime slice. Add a cookie on the side if desired. Serve immediately.

Make-ahead note: Both sorbets keep covered in the freezer up to 2 weeks. Let sit at room temperature 5–10 minutes to soften before scooping.
