Pit the cherries and rinse both cherries and blackberries gently. Drain well.

In a small saucepan over medium heat, combine the cherries, blackberries, granulated sugar, lemon juice, and 2 tablespoons water.

Bring to a gentle simmer, stirring occasionally. Cook 6–8 minutes until fruit is softened and juices are released but still slightly chunky.

Remove from heat and set aside. If you prefer a smoother compote, mash lightly with a fork or potato masher to desired texture.

While the compote cooks, in a separate small saucepan combine the red wine, brown sugar, black peppercorns, cloves, star anise, cinnamon stick, and orange zest.

Bring to a simmer over medium-high heat, then reduce heat to maintain a gentle simmer. Cook, uncovered, until the liquid reduces by about half and is syrupy, about 12–15 minutes. Stir occasionally to dissolve the sugar.

Taste for balance; if too bitter, add another 1/2 teaspoon brown sugar. Strain the reduction through a fine-mesh sieve into a small bowl to remove whole spices and zest, pressing gently to extract flavor. Discard solids.

Return the strained syrup to the warm saucepan off the heat and whisk in the unsalted butter until glossy. Add a pinch of sea salt and stir to combine.

Fold about 3 tablespoons of the warm red wine reduction into the fruit compote to marry flavors; keep remaining reduction for drizzling.

Spoon one scoop of vanilla ice cream or a dollop of mascarpone into each serving bowl or dessert plate (serves four).

Top each with about 1/2 cup of warm fruit compote (roughly), then drizzle with 1 tablespoon of the reserved red wine reduction per serving.

Garnish with a small sprinkle of finely chopped fresh mint if using, and finish with a very light grind of fresh black pepper or an extra pinch of sea salt to accentuate the winey, earthy notes.

Serve immediately so the ice cream contrasts with the warm compote and syrup.
