Prep and salt eggplant

Slice eggplant into 1/4-inch rounds. Sprinkle both sides lightly with 1/2 teaspoon salt, arrange on a rack or paper towels and let sit 20 minutes to draw bitterness/moisture. Pat dry with paper towels.

Preheat oven

Preheat oven to 220°C (430°F). Line 2 rimmed baking sheets with parchment paper or lightly oil them.

Toss and roast

Toss eggplant, zucchini, and potato slices with 3 tablespoons olive oil, 1 teaspoon salt, and 1 teaspoon black pepper so all slices are lightly coated. Arrange in a single layer on the prepared sheets (use two batches if needed). Roast 15–20 minutes, flipping once halfway, until vegetables are tender and lightly browned. Remove and reduce oven to 190°C (375°F).

Tomato Sauce

Sweat aromatics

Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the finely chopped onion and a pinch of salt and cook, stirring, until translucent, 5–7 minutes. Add the minced garlic and cook 30–60 seconds until fragrant.

Simmer sauce

Add 800 ml crushed tomatoes and 2 tablespoons tomato paste to the pan. Stir in 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1 teaspoon sugar (if using), 1 teaspoon salt and 1 teaspoon black pepper. Bring to a gentle simmer, reduce heat to low and simmer uncovered 15–20 minutes until slightly thickened and flavors meld. Taste and adjust seasoning. Keep warm.

Bechamel Sauce

Make roux

In a medium saucepan over medium heat, melt 4 tablespoons unsalted butter. Add 4 tablespoons all-purpose flour and whisk constantly for 1–2 minutes to cook the raw flour taste, forming a smooth paste (roux) but not browning it.

Add milk and thicken

Gradually whisk in 700 ml whole milk, a little at a time, breaking up lumps until smooth. Increase heat to medium and continue whisking until the sauce thickens and coats the back of a spoon, about 6–8 minutes. Reduce heat to low.

Season and enrich

Stir in 1 teaspoon grated nutmeg, 1 teaspoon salt and 1 teaspoon white or black pepper. If using, temper 1 egg yolk by whisking a few tablespoons of the hot bechamel into the yolk, then whisk the yolk mixture back into the pot for a richer, silkier sauce. Remove from heat and keep warm.

Assembly & Baking

Layer moussaka

Reduce oven to 180°C (350°F). In a 9x13-inch (23x33 cm) baking dish, spread a thin layer (about 1 cup) of the tomato sauce over the bottom. Arrange a single layer of roasted potato slices to cover the sauce. Spoon and spread another 1 cup tomato sauce over the potatoes. Next layer the roasted eggplant slices to overlap slightly, then spread another 1 cup tomato sauce. Layer the zucchini on top. You should have 3–4 layers depending on dish depth; press gently to compact layers and reserve any remaining tomato sauce to spoon between layers or serve alongside.

Top with bechamel and cheese

Pour the warm bechamel evenly over the assembled vegetables, using a spatula to smooth it to the edges and ensure it fills gaps. Sprinkle the top with about 3/4 cup of the grated cheese, reserving a small amount for browning. If desired, dot with a few small knobs of butter to encourage browning.

Bake

Bake at 180°C (350°F) for 35–40 minutes, until the top is set and golden brown and the filling is bubbling at the edges. If top is browning too slowly, finish under the broiler for 2–3 minutes, watching carefully.

Rest and garnish

Remove from oven and let moussaka rest at least 20–30 minutes before cutting—this helps it set so slices hold. Sprinkle remaining grated cheese and chopped fresh parsley over the top before serving. Serve warm.
