Slice the sucuk

Remove sucuk from packaging and pat dry with paper towel. Trim any casings if present. Slice the sausage into 0.3–0.5 inch (8–12 mm) thick rounds. If you prefer a chewier bite, slice on the thicker side; for crispier pieces, slice thinner.

If using optional tomatoes, halve the cherry tomatoes. Chop parsley and prepare lemon wedges and bread for serving.

Heat the pan

Place a large nonstick or cast-iron skillet over medium heat. Add 2 tablespoons olive oil and let it warm until shimmering but not smoking, about 1 minute.

Cook the slices

Arrange sucuk slices in a single layer in the hot pan. Do not overcrowd; cook in batches if needed. Fry without moving for 1.5–2 minutes until the underside is deeply browned and edges begin to crisp.

Flip each slice and cook the other side for another 1–1.5 minutes until both sides are browned and the fat has rendered. If the pan becomes very dry and slices are sticking, add a teaspoon of oil.

If using black pepper or smoked paprika, sprinkle them over the slices during the last 30 seconds of cooking and toss briefly to coat.

Transfer cooked slices to a plate lined with paper towel to drain briefly while you finish remaining batches.

Optional: Eggs & tomatoes (sunny-side or scrambled)

Cook tomatoes

In the same skillet with a little of the rendered sucuk fat (add 1 tsp olive oil if needed) add halved cherry tomatoes. Sauté over medium heat 2–3 minutes until softened and slightly blistered.

Cook eggs (sunny-side)

Push tomatoes and any oil to the side of the pan. Crack eggs into the pan and cook sunny-side up over medium-low heat until whites are set but yolks remain runny, about 3–4 minutes. Optionally cover the pan for 30–45 seconds to help whites set.

Cook eggs (scrambled)

Alternatively, beat eggs with a pinch of salt and pepper. Pour into the pan and gently fold over low heat until softly set, 1–2 minutes. Remove from heat before fully firm to retain creaminess.

To serve

Arrange sucuk slices on a serving platter or individual plates. Add eggs and blistered tomatoes if using. Sprinkle chopped flat-leaf parsley and red pepper flakes to taste. Serve with lemon wedges and crusty bread alongside to mop up juices.

Sucuk is rich and salty — squeeze a little lemon over the sausage right before eating to brighten the flavors.
