Method

Base Sorbet Mix

Combine water, granulated sugar, and corn syrup (and invert sugar if using) in a medium saucepan.

Heat gently over medium heat, stirring until the sugar is completely dissolved and the mixture just comes to a simmer (do not boil vigorously).

Simmer very gently for 2–3 minutes to create a light syrup, then remove from heat.

Stir in the fine sea salt and powdered dry milk (if using) until fully dissolved and incorporated. Let the syrup cool for 10–15 minutes at room temperature.

If using vodka, stir it into the cooled syrup now.

Chill the base syrup thoroughly in the refrigerator until cold (at least 1 hour or overnight). Chilling the base improves freezing and texture.

Lemon Sorbet

After the base syrup is chilled, strain it through a fine-mesh sieve into a bowl to remove any undissolved solids.

Add fresh lemon juice and lemon zest to 1/2 of the chilled base syrup (if making both flavors from the same batch) or to the entire chilled base if making only lemon sorbet. Stir well to combine.

If using lemon oil or concentrated extract, add it now a little at a time, tasting to avoid over-concentration.

Taste and adjust balance: if too tart, add a teaspoon of simple syrup (equal parts sugar and water reduced) or a pinch more sugar; if too sweet, add a little more lemon juice.

Chill the finished lemon mixture briefly (15–20 minutes) if it warmed while mixing, then process in an ice cream maker according to manufacturer instructions until it reaches a soft-sorbettelike consistency (typically 20–30 minutes).

Transfer churned lemon sorbet to a shallow metal or freezer-safe container, cover with parchment pressed to the surface to minimize ice crystals, and freeze until hard-set (4–6 hours or overnight).

Mango Sorbet

If using fresh mangoes, peel and dice 2–3 ripe mangoes and puree in a blender until completely smooth. Strain through a fine-mesh sieve to remove fibrous bits for the smoothest texture.

Combine the mango puree with fresh lime juice and mango concentrate (if using). Stir to blend.

Taste the mango mix for sweetness and acidity; adjust with a teaspoon of simple syrup or a little more lime juice if needed.

Fold the mango puree into 1/2 of the chilled base syrup (if splitting one batch) or into the entire chilled base syrup if only making mango sorbet. Mix until homogeneous.

Chill the mango mixture briefly (15–20 minutes) if it warmed during mixing, then process in an ice cream maker following manufacturer instructions until it reaches a soft-sorbet consistency (about 20–30 minutes).

Serving and Storage

For hard-set scoops, remove sorbet from the freezer 8–10 minutes before serving to soften slightly for easier scooping.

Store sorbet in airtight containers with a piece of plastic wrap or parchment pressed to the surface to reduce ice crystal formation. Best consumed within 2–3 weeks for optimal texture and flavor.
