Check the bottle for sediment and the vintage. Primitivo Il Pumo is full-bodied and may have some sediment if older; hold the bottle upright for a few minutes before opening.

Assess bottle

Use a waiter’s corkscrew to remove the foil and cork cleanly. Wipe the bottle lip with a clean cloth. Pour a small taste to confirm aromas and quality.

Open bottle

If the wine is young and dense (typical Primitivo), decant for 30–60 minutes to soften tannins and open fruity and plum aromas. If the bottle is older and shows sediment, decant carefully, leaving sediment in the bottle.

Decant (optional)

Serve slightly below room temperature: 16–18°C (60–65°F). If wine is warmer, chill in the refrigerator for 20 minutes; if too cold, let sit in the glass 10–15 minutes.

Serve temperature

Use a large Bordeaux-style glass. Pour 120–150 ml (about 4–5 oz) per serving to allow swirling and aroma development.

Before drinking, swirl gently and inhale: expect intense plummy fruit, black cherry, mild spice, and rounded tannins. Note soft, balanced finish and full body.

Tasting notes to highlight

Arrange the 100 g of aged cheese wedges and 100 g of cured salami on a small board. Lightly crack 1 tsp black pepper over the cheese if desired. Let both sit at room temperature for 15–20 minutes so flavors open to match the wine's body.

Prepare cheese and charcuterie

Lightly toast 6 slices of country bread or crostini until golden and crisp. Optionally brush each slice with 1 tsp extra-virgin olive oil while still warm.

Toast bread

Halve and pit 4 plums. Place cut side down on a hot grill or grill pan for 2–3 minutes until caramelized marks appear and sugars concentrate. Optionally top with a small rosemary sprig while grilling for aromatic lift. Let cool slightly.

Grill plums

On a platter, place the cheese wedges, salami slices, grilled plum halves, toasted bread, and 30 g dark chocolate squares. Arrange so each bite combination is easy: cheese + plum, salami + bread, chocolate with a sip of wine.

Plate pairing

Present the decanted wine alongside the platter. Recommend guests begin with small sips, alternating with pairing bites to experience contrasts: sweet plum notes with savory cheese and umami charcuterie, and dark chocolate to echo the wine's dark fruit.
