Bring the bottle out of the refrigerator or cellar 30–60 minutes before serving so it reaches approximately 16–18°C (61–64°F). Inspect the cork and label for condition. Use a two-prong cork puller or waiter’s corkscrew to open the bottle gently to avoid cork breakage.

Inspect and open

If the bottle is older than 10 years or you want to aerate the wine, decant into a clean decanter. Pour slowly in one steady stream until about two fingers remain in the bottle; stop if you notice sediment collecting at the neck. For younger, robust full-bodied bottles (including many modern Domaine de la Solitude wines), decant 30–60 minutes to allow the wine to open up and soften tannins.

Decant (recommended for older or full-bodied bottles)

Serve in large-bowled red wine glasses that allow aromas to concentrate. The ideal serving temperature is 16–18°C. If the wine is slightly warm, place the bottle in the refrigerator for 10–15 minutes before pouring; if too cold, leave it at room temperature for 20 minutes.

Pour about 120–150 ml (4–5 fl oz) per glass to allow space for swirling. Hold the bottle at the base, tilt the glass, and pour gently to avoid splashing and excessive aeration.

Pouring

Begin by inspecting the wine color against white paper or a napkin—note the deep ruby to garnet hues. Swirl gently to release aromas, then take short and then deeper sniffs to identify ripe black cherry, leather, spice, and subtle herbal notes. Take a small sip, let it coat the mouth, and note texture (full-bodied, tannin presence, acidity) and flavors (ripe black cherry, plum, leather, spice). Spit or swallow depending on context.

Tasting protocol

Provide filtered water and plain crackers or bread for palate cleansing between tastings and to help guests stay hydrated.

If serving with food: for grilled lamb chops, season chops with salt and pepper and grill to medium-rare to medium (about 3–4 minutes per side depending on thickness). Rest 5 minutes before serving. Serve roasted root vegetables seasoned with olive oil, salt, pepper, and fresh thyme roasted at 200°C (400°F) for 30–40 minutes until caramelized. Offer slices of aged hard cheese on a board; the wine’s ripe fruit and leather notes complement the savory, nutty cheese.
