SPANISH OIL DIP

If the bottle is not already chilled, place the sealed 750 ml bottle of Cankaya in an ice bath (a container filled with 2 cups of ice and 1 cup cold water) for 15–20 minutes until it reaches 8–10°C (46–50°F). Alternatively refrigerate for 2–3 hours.

Chill wine (if needed)

Open the bottle shortly before serving. Pour into white wine glasses, filling each glass about one-third full (about 120–150 ml) to allow the wine's aromas of citrus and white fruit to concentrate.

Serve the wine crisp and cold. Offer lemon wedges on the side so guests can optionally add a light squeeze to fish on their plate (not directly into the wine).

Pat the fish fillets dry with paper towel. Lightly brush both sides with 2 tbs extra-virgin olive oil, season evenly with 1 tsp sea salt and 1/2 tsp freshly ground black pepper.

Season fish

Preheat grill or grill pan to medium-high heat. Place fish skin-side down (if applicable) and grill 3–5 minutes per side, depending on thickness, until opaque and flakey. Avoid overcooking to keep the fish moist and delicate to match the wine's crisp profile.

Grill fish

Remove fish from grill. Squeeze fresh lemon over the fillets to taste and sprinkle with 2 tbs chopped fresh parsley. Serve immediately alongside chilled glasses of Cankaya.
