Prepare asparagus

Rinse the asparagus under cold running water to remove grit. Pat dry with a kitchen towel. Hold a spear near the middle and bend until it snaps — it will break where the woody end begins. Use this as a guide to trim the remaining spears: line them up and cut the ends off with a sharp knife (about 1 to 1.5 inches from the bottom) so all spears are uniform.

Mince garlic and zest lemon

Finely mince the garlic cloves. Zest the lemon with a microplane and then cut the lemon in half; reserve one half for squeezing and the other for optional garnish.

Preheat skillet

Place a large heavy skillet (cast-iron or stainless steel) over medium-high heat. Allow the pan to heat for 2 minutes so it’s hot but not smoking.

Sauté asparagus

Add the olive oil and butter to the hot skillet. When the butter has melted and begins to foam, add the asparagus in a single layer. Let cook undisturbed for 2–3 minutes to develop a light sear. Shake or stir the pan and continue to cook, turning occasionally, for another 3–4 minutes until the spears are bright green and just tender when pierced with a fork (total cook time 5–7 minutes depending on thickness).

Add garlic and season

In the last 60 seconds of cooking, push the asparagus to one side and add the minced garlic to the empty area of the pan. Stir the garlic briefly (about 15–30 seconds) until fragrant but not browned, then stir it into the asparagus. Sprinkle with kosher salt, black pepper, and red pepper flakes if using, and toss to combine.

Finish with lemon and cheese

Remove the pan from the heat. Squeeze the juice of half a lemon over the asparagus and sprinkle the lemon zest. If using Parmesan, grate or sprinkle it over the hot spears so it melts slightly. Toss gently to coat.

Serve

Transfer asparagus to a serving platter. Taste and adjust seasoning with additional salt, pepper, or lemon if needed. Serve immediately as a side dish or top with toasted almonds or a poached egg if desired.
