Chill glass

Optionally chill a large wine glass in the freezer for 10–15 minutes or fill it with ice for a minute and discard to cool the glass.

Fill a large wine glass generously with ice cubes until near the rim. Well-chilled glass keeps the drink cold without diluting it quickly.

Pour 3 parts Aperol over the ice. Measure with a jigger or by eye (for example 90 ml Aperol if using 30 ml as one part).

Add 2 parts Prosecco slowly to preserve bubbles and prevent foaming. Pour gently down the inside of the glass or over the back of a spoon.

Top with 1 part soda water. Stir once gently with a bar spoon — one or two slow strokes — to combine without flattening the sparkle.

Garnish with an orange slice placed on the rim or floated in the drink. Serve immediately.
