Taco Preparation

Prepare the Slaw

In a bowl, mix shredded red cabbage, grated carrot, diced jalapeno, lime juice, and chopped cilantro. Set aside to marinate.

Cook the Shrimp

In a skillet over medium-high heat, add a little oil and sauté the Gulf shrimp for about 3-5 minutes until they turn pink and opaque. Season with salt and pepper.

Prepare the Mango Salsa

Dice the mango, red onion, and jalapeno. Combine them in a bowl with lime juice and salt to taste. Mix well.

Warm the Tortillas

Heat corn tortillas in a dry skillet for about 30 seconds on each side until warm and pliable.

Assemble the Tacos

Place a portion of the shrimp on each tortilla, top with jalapeno slaw and mango salsa. Drizzle with sweet Thai chili sauce.

Grill or boil the corn until cooked. Remove from heat, slather with mayonnaise, sprinkle with cotija cheese, chili powder, and lime juice.
