Method
Pretzel Preparation
Make the Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until foamy. Stir in the salt and flour until a dough forms.
Knead and Rise
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Shape the Pretzels
Preheat the oven to 450°F (232°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
Boil and Bake
In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then remove and place on a baking sheet. Sprinkle with coarse sea salt and bake for 12-15 minutes until golden brown.
Sausage & Cheese Serving
Plate the Dish
Arrange the pretzels, grilled sausages, artisanal cheese, and grapes on a large serving platter. Serve with mustard on the side.
