Method

Preparing the Fries

Cutting the Potatoes

Peel the Russet potatoes and cut them into thick strips, about 1/2 inch wide.

Soaking the Potatoes

Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drying the Potatoes

Drain the potatoes and pat them dry with paper towels.

Frying the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes.

Salting the Fries

Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt.

Making the Mayonnaise

Roasted Garlic Mayonnaise

In a bowl, combine mayonnaise, roasted garlic cloves (mashed), lemon juice, and salt. Mix well and set aside.

Pesto Mayonnaise

In a bowl, mix mayonnaise, pesto sauce, and lemon juice until smooth. Set aside.

Lemon-Cayenne Aioli

In a bowl, combine mayonnaise, lemon juice, cayenne pepper, garlic powder, and salt. Mix until well incorporated.
